The Lapierre family lived and cultivated vines in the commune of Coudoux from the end of the 18th century.
In 1935, Jean Lapierre, then an officer in the French Navy, decided to devote himself solely to the land, which was mainly planted with olive trees.

Situated halfway between the Montagne Sainte Victoire and the Massif des Alpilles, lies the vineyard of Château Saint Hilaire.
The 60-hectare estate, which faces due south and is farmed organically, benefits from exceptional sunshine under the Mediterranean influence, where the mistral wind cradles the bunches of grapes until they are ripe
